Organ Music:
Tradition advises against organ music during Lent, except as needed to accompany singing or on festive occasions.
A well-chosen organ prelude may be appropriate, however, to set the mood for this evening's beginning of the Paschal Triduum.
The organ should be used to accompany a sturdy Opening Hymn and Gloria.
It should then be completely turned off and not touched again until the Gloria of the Easter Vigil.

Liturgical Hints & Ideas:
The Mass of the Lord's Supper has two great themes: the institution of the Holy Eucharist (and the priesthood which perpetuates this sacrifice) and the Mandatum, the command to "Love one another" exemplified in the Foot Washing.
Music must revolve around these themes.
There is an abundance of traditional music for today's liturgy: Pange lingua, Ubi caritas, Nos autem.
Use these together with standard hymns and choral pieces to put this liturgy at the center of Catholic Eucharistic theology.
